1861 DISTILLERY

1861 DISTILLERY GREW out of two friends spending
countless hours experimenting, learning, and chasing
the idea that spirits made with patience simply taste
better. Those early days were less about building
a business and more about building a philosophy:
respect the process, take your time, and never compromise on quality. 1861 was named for the year the
first train brought visitors south to
Thomasville and began the famous
hospitality industry there.
“What we love most about this
business is that the same philosophy
still guides everything we do today.
We do not chase trends or lean on
gimmicks,” said Jill Higgins, co-owner and marketing director. “Great
spirits require patience and a willingness to let the process unfold the
way it should. That low-and-slow
mindset has become the backbone
of our distillery and the reason every bottle reflects
substance over flash.”
Thomasville is the perfect place for that kind of
work. Anyone that has been to Thomasville knows
the town values heritage, hospitality, and doing
things the right way, which mirrors what 1861 believes about their craft. It is also a place that appreciates meaningful luxury, not in
excess, but in experiences that feel
rare, personal, and worth savoring.
“That spirit inspired Barrel Privé,
our custom bourbon creation experience and the ultimate expression
of craftsmanship, connection, and
Southern hospitality,” said Higgins.
“We are proud to create something
here that feels deeply rooted in place
and gives people a reason to slow
down and enjoy where they are.”
Gin is among 1861’s favorites,
with three current offering, featuring a traditional
dry gin but also a more “floral-forward” option with
notes of rose, chamomile and lavender, as
well as a more spiced
variety that includes
ginger, cinnamon and
nutmeg notes.
A little something
for everyone, 1861 also
offers amaretto and rye
whiskey and can be
found in a number of
stores across the region.
